Week Ending 1.06.13

Sauteed Fish w/veggies & rolls
  • Sautee fresh (or frozen wild caught) fish in olive oil over medium heat with chopped green onions and garlic until fish is flaky.  Serve with steamed kale and roasted potatoes.  
 
Red Beans & Rice
  • Heat Camilla Beans in a 4 quart pot with water on medium heat for several hours.  Add Creole seasoning, salt & pepper to taste.  I like to cut up some celery and add that to the pot as well.  Add a couple bay leaves to the pot.  Keep an eye on the beans as you will have to add more water to the pot so the beans do not burn.  Once the liquid becomes more of the Camilla bean color and the beans are soft, they are done.  Serve over rice.
Jambalaya w/Shrimp *This recipe was adapted from 100 Days of Food
  • Follow 100 Days of Food recipe.  I did not add the oysters or chicken broth.  I also added Shrimp.
Slow Cooker Chicken
  •  6 chicken breasts
  • 2 teaspoons creole seasoning
  • 1 teaspoon salt
  • 1 teaspoon thyme
  • ½ teaspoon garlic salt
  • ¼ teaspoon cayenne (red) pepper
  • ¼ teaspoon black pepper
Cut up the onion and place in the bottom of slow cooker.  Add 1 cup of water to the slow cooker.  Mix all spices together and coat the chicken.  Place chicken in slow cooker on high for 5-6 hours.
After dinner, shred the remaining chicken and store in fridge for Chicken Tacos tomorrow!

Chicken Tacos 
  •  Serve chicken taco meat (from leftover chicken) w/ pico de gallo, guacomole, etc.  Serve w/ Chips and salsa!
Bean & Cheese Quesadillas
  • Pinto Beans
  • Green Onions
  • 1 teaspoon Garlic
  • Salt & Pepper to taste
Mix all ingredients and smash up.  Add to a skillet on medium heat and continue to stir until desired consistency is reached.  Beans should start to get thick.
Once beans are done, set aside.
Place torilla in a warm (medium heat) skillet and add bean mix and cheese.  Place second tortill over bean & cheese mix, flip until tortillas are somewhat crispy.

Week Ending 1.13.13
 All dinner items are either above or store bought.  The pasta & sauce was already in my pantry.  They both are store bought.  I am cleaning out my pantry and getting rid of processed foods, so you may see some more processed dinners in the weeks to come.
